Peach Cream Melba with Mascarpone

Ingredients

28 oz Mascarpone

3 oz Fresh Peaches

32 oz Water

18 oz Sugar

1 oz Lemon Juice

1  Vanilla Bean, Shredded

9 oz Cranberry Jelly

3 oz Fresh Cranberries

 

Directions

  1. Whip Mascarpone with wire whip, full speed for 4 minutes.
  2. Peel peaches and cook them with water, sugar, lemon juice and vanilla.
  3. Let product cool and slice peaches into quarters.
  4. At bottom of each glass, put a quarter of a peach and cover with cranberry jelly.
  5. Refrigerate.
  6. Once chilled, cover with whipped Mascarpone Garnish with peaches and fresh cranberries.
